your favorite vegetarian Instant Pot / slowcooker recipes?

I bought myself an Instant Pot, because I've seen quite a lot of slowcooker recipes around, and many people who are enthusiastic about that method. And also I eat a lot of grains and pulses which thus far I've just cooked the old fashioned way, but figure this device ought to make more convenient.

Anyway, because for years I did not own such thing I of course failed to bookmark all the applicable recipes I've seen around. Do you have favorite recipes?

Here's a post I made a few months ago about a white bean and harissa stew. I made it with chicken broth but I believe the original recipe (linked in my post) calls for just water.

Thanks! I don't think I've ever seen or used preserved lemon, but then I never looked for it. I guess I'll keep an eye out the next time I'm in a middle eastern store.

My sister gave me an Instant Pot and I was so excited! But all I ever use it for is making yogurt. It makes fantastic yogurt, by the way. I hope you find some good recipes. I need to start looking for some, too.

I don't really see myself making yogurt because tasty yogurt (even organic) is quite cheap here and all sorts of fermented milk stuff is readily available (not just yogurt and quark, also skyr and the traditional local soured milk which uses different bacteria, a kind that unsurprisingly likes it cooler than yogurt bacteria).

But if I stumble across really good recipes and uses, I'll try to remember to post about them.
