yummy food

No Halloween candy here, but I indulged myself tonight with making a sweet fruit/nut bread that turned out surprisingly yummy for being kind of improvised without following a real recipe closely. Mostly all the recipes I found asked for overnight soaking of the dried fruits in some tasty liquor, which didn't really work with me wanting fruit bread right now (or at least soonish).

Anyway, basically I just took a lot of dried fruit and hazelnuts (almost 1kg mixed dried fruit and 200g hazelnuts), cut the fruit into smaller chunks and cooked them briefly with some rum and water before letting them soak just a bit (instead of doing the overnight soaking thing), flavored the mix with some cinnamon, a gingerbread spice mix and some honey, and worked all that in simple yeast dough from roughly 250g flour and the soaking liquid (though I used a whole yeast cube because of all the fruits that would go into the bread). Obviously with a fruits/flour ratio of 4:1 it's far more fruit than bread, even though I had to add some more flour while kneading the fruit mix under to combat the stickiness, but it somewhat surprisingly works to have that much fruit in so little dough.

I had a couple of slices as dessert after dinner earlier, and it was very tasty. Also I now have to figure out whom to bring some fruit bread, as this made for two loaves, and there's no way I'm going to eat all of it. (Which is the reason why I usually curb such baking impulses.)
